Fruity Muesli Yoghurt
Preparation Time: 10 minutes
Cooking Time: 4 minutes
75g / 3oz / 3/4 cup hazelnuts (cobnuts)
150g / 5oz / 1.5 cups gluten-free rolled oats
100g / 3.5 oz / 2/3 cup raisins
750g / 1lb 10oz / 3 cups plain yogurt
2 mediums nectarines, pitted and sliced
2 tbsp runny honey
1) Place a dry frying pan over a medium heat. Add the hazelnuts and toast briefly until they give off a nutty aroma.
2) Stir into the oats and raisins in a mixing bowl.
3) Fill serving bowls with the yoghurt before topping with slices of nectarine, a drizzle of honey and spoonfuls of the muesli, then serve.
