Dressed Asparagus Salad
Preparation Time: 10 minutes
Cooking Time: 5 minutes
75g/3oz or 1/2 cup plain yogurt
2 tbsp mayonnaise
1tbsp hot water
1/2 tsp paprika
salt and freshly ground black pepper
450g / 1lb 4 cups asparagus spears, woody ends removed
150g / 5 oz / 1 cup roast pork slices
2 tbsp baby capers in brine, drained a large handful of rocket (arugula)
1) Whisk together the yogurt, mayonnaise, hot water and paprika in a small bowl; season and set to one side.
2) Cook the asparagus in a large saucepan of salted, boiling water for 3-4 minutes until tender, then refresh immediately in iced water.
3) Once cool, drain and pat dry, and then arrange on plates.
4) Top with folded slices of pork, baby capers and rocket leaves, then dress with the yogurt sauce and a little more seasoning before serving.
