Heat cooking oil in a pan. Sautee the garlic, onion and ginger in the pan until golden brown colour.
Add in chicken thigh and stir-fry together with the ingredients above.
Add in snow peas and black fungus, carrot and stir-fry.
Add in water, oyster sauce, soy sauce and stir-fry until well mixed.
Simmer the chicken until cooked.
